400 grams of Darling Downs oyster blade
4 eggs
3 Potatoes
2 Tbsp vegetable oil
1 Tsp salt
1 Tsp ground pepper
¾ Tsp smoked paprika
2 Tbsp butter
Olive oil
Salt
Step 1: Heat oven to 200 C / 400 F
Step 2: Peel potatoes and cut into chunks. Add potatoes to a large pot and rinse off starchy water.
Step 3: Cover potatoes with water and generously salt the water. Bring potatoes to a simmer and cook until almost tender.
Step 4: Pour potatoes into colander and shake them until they look a little rough.
Step 5: Drizzle a generous amount of olive oil onto a sheet pan and tip potatoes onto the pan. Sprinkle on a little salt and put in the oven for 20 minutes.
Rub Oyster Blade with 1 tbsp vegetable oil, and season all over with salt, pepper & paprika.
Heat a cast iron skillet over medium-high heat. Add oyster blade and flip once a crust has formed on the side of the steak.
Reduce heat to medium-low and add butter to pan. Tilt skillet to one side to form a pool of melted butter. Using a spoon, baste the steak to form a more golden crust. Cook until medium. After that, transfer Oyster Blade onto a cutting board and let rest.
Heat remaining 1 tbsp oil in skillet over medium heat until simmering. Crack eggs into pan and cook to your liking. Remove from heat and season with salt and pepper.
Remove potatoes from oven and plate steak with eggs and potatoes. Garnish & serve.
