Darling Downs Oyster Blade 200g
Parsley 1/4 cup
Mint 2 tablespoons
1/4 cup of basil
2 teaspoons
Chopped Garlic 1
2 teaspoon lemon peel
Salt
Pepper
Water 2 1/3 cup
Olive oil
Cherry tomato

In a food processor, mix together parsley, mint, basil, caper, minced garlic, and lemon peel until they form a coarse dough.
Slowly add olive oil to the mixture to make green sauce. Set aside. Bring water to a boil in a pot and add a small amount of polenta. Stir until the polenta thickens, then reduce heat to low and season with salt to taste. Grind Parmesan cheese and stir into the polenta until melted. Keep warm. Season the meat thoroughly with salt and pepper.
Heat a pan with olive oil over medium-high heat. Cook the meat back and forth for about 4 minutes or until it reaches your desired level of doneness.
Let the meat rest for 5 minutes before slicing diagonally into thick pieces and serve the meat and green sauce on top of the polenta!
